Every
year, the day before Ash Wednesday, in different regions of the world, people
celebrate Pancake Day - also known as Shrove Tuesday or Mardi Gras.
But
why do we celebrate Pancake Tuesday? Ash Wednesday marks the beginning of Lent,
a time linked with penitence, abstinence and reflection. For this reason,
people consider Shrove Tuesday as the last day of food binging before 40 days
of moderation.

This day is famous not just for deliciousness (can you
resist a pancake?) but also for traditional pancake races - a good way to burn
off the calories! These fun races are hosted in many villages around the UK -
the oldest dating back to 1445 in Olney, Buckinghamshire.

The competition sees people running along,
holding a frying pan and flipping the pancake, without letting it fall before
reaching the finishing line. It sounds easy but it’s not: hard
flipping-training is required to become a master and to be able to win the
race!
Getting
back to the pancake itself, depending on your taste and batter, you can make
different versions: sweet or savoury, thick or thin. For all of them the
ingredients and technique is the same: mixing together flour, milk, eggs and
sometimes baking powder; the batter has to be left a couple of hours to rest
and then you can pour it (be careful with the quantity) into a frying pan. When
the topside starts to show few bubbles, the pancake is ready to be flipped.
The
good thing about pancakes is that they can make happy a sweet or a salty tooth.
In fact, it’s not unusual to find pancakes served as main dishes, filled with
savoury ingredients such as meat, veggies or cheese.
Pancakes
are very easy to make and they don’t require too much effort. When you have
found your perfect batter recipe and your flipping skills are good, you will find
yourself preparing them all year round!

plain flour (or gluten free plain flour)

Measure
the dry ingredients into a bowl. Whisk in the egg, and gradually stir in the
milk to form a smooth batter.
Melt
a little butter or coconut oil in a non-stick frying pan, and when hot pour in
enough batter to coat the pan in a thin layer. Cook on one side, and then flip
to cook the other.
Serve
sprinkled generously with Sukrin Gold and
lemon juice, or other topping of your choice.
