AMERICAN STYLE CHEESECAKE
250 g digestive biscuits
125 g unsalted butter
225 g caster sugar
3 tbsp corn flour
675 g cream cheese (Philadelphia)
2 eggs
1 tsp vanilla essence or grated zest of ½ lemon
300 ml whipping cream
75 g sultanas
Topping
425 g canned cherries/strawberries in syrup
½ tbsp corn flour
Preparation Method
To make the base, break the biscuits into pieces, put them in a plastic bag and crush with a rolling pin. Melt the butter and stir in the crushed biscuits. Line a heart-shaped spring form cake tin with baking paper and grease the sides. Press the crushed biscuit mixture over the base.
For the filling, mix the sugar and corn flour. Beat in the cream cheese. Add the eggs and vanilla (or lemon zest). Beat until smooth. Slowly whisk in the whipping cream until thickened. Stir in the sultana. Pour over the biscuit base. Bake for 1 hour in an oven preheated to 180 C, GAS 4. Cool.
For the topping, drain the cherries/strawberries, reserving 120 ml syrup. Mix the corn flour with 1 tbsp of syrup. Pour the remaining syrup into a pan, stir in the corn flour mixture and bring to the boil, stirring until thick. Cool. Decorate the cheesecake with circles of cherries/strawberries and pour over the glaze.
